Turkey Tacos


  • 1 1/4 pounds ground turkey
  • 1 1/2 cups mild salsa
  • 1 (15 oz.) can pinto beans, rinsed and drained
  • 1 cup California Black Ripe Olives, halved
  • 8 to 12 corn tortillas, heated (6-inch)
  • 1 cup shredded Monterey Jack cheese
  • 1 head shredded iceberg lettuce


  1. Heat a large non-stick pan over medium high heat. Add turkey and cook for 5-7 minutes, stirring occasionally until cooked through.
  2. Mix in salsa, beans and California Ripe Olives and continue cooking until well-heated.
  3. Spoon turkey mixture into the center of each tortilla.
  4. Top with cheese and lettuce and roll up into a taco shape. Serve immediately.
