Mediterranean Zucchini Noodles


  • 4 zucchini, spiralized
  • 1 tablespoon olive oil
  • 2 garlic cloves, finely minced
  • 2 tablespoons capers
  • 1/4 cup sliced California Ripe Olives
  • 1 teaspoon dried oregano
  • 1/8 cup chopped sun-dried tomatoes
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon fresh lemon juice
  • Salt/pepper to taste
  • 1/3 cup thinly sliced basil leaves
  • 1/2 cup feta (omit for dairy-free version)


  1. Spiralize the zucchini and place in a large bowl.
  2. Heat the oil in a large skillet over medium-high heat. Add the tomatoes and garlic and stir until tomatoes have softened, about 5 minutes.
  3. Add the rest of the ingredients except for the basil and feta and cook another 5 minutes.
  4. Toss the sauce with the zucchini strands and stir in the feta and basil.
  5. Serve immediately.


For leftovers, store the sauce and zucchini strands separately.
