Grilled Guac-O-Mole Chicken


  • 1/2 cup lime juice
  • 1/2 cup chopped cilantro
  • 1 tablespoon minced garlic
  • 4 (6 oz.) boneless chicken breasts
  • 2 teaspoons chipotle chili powder
  • Salt to taste
  • 1 large avocado
  • 1/2 cup California Black Ripe Olives


  1. Combine lime juice, cilantro and garlic in a small mixing bowl.
  2. Pour half into a shallow baking dish. Cover remaining half of mixture and set aside.
  3. Place chicken breasts in baking dish and sprinkle with chili powder and season with salt.
  4. Cover and marinate in the refrigerator for 30-60 minutes.
  5. After chicken has marinated, grill over medium-high heat for 4-5 minutes on each side until cooked through.
  6. While chicken is cooking, combine avocado, California Ripe Olives and reserved lime cilantro mixture. Season with salt and serve with chicken.
