Turkish Sea Bass

Ingredients

  • 1 1/2 pounds oranges, peeled and sliced into 1/4-inch thick rounds
  • 3/4 cup California Black Ripe Olives, wedged
  • 1/2 cup red onions, sliced
  • 1 tablespoon chopped parsley
  • 1 tablespoon chopped mint
  • 1/8 teaspoon ground coriander
  • 1/8 teaspoon ground cinnamon
  • 1 pinch Cayenne pepper
  • 4 (6 ounce) boneless, skinless sea bass fillets
  • 3/4 teaspoon Kosher salt
  • 1/4 teaspoon paprika
  • 1 tablespoon olive oil

Directions

  1. In a medium sized mixing bowl combine oranges, California Ripe Olives, onions, parsley and mint.
  2. Season with coriander, cinnamon and cayenne. Set aside.
  3. Season fish with salt and paprika.
  4. Heat oil in a large sauté and over medium high heat.
  5. Place bass in pan and cook on each side for 3-4 minutes. Serve sea bass on top of orange salad.
