Tofu with Olives and Lemon

- 1 block extra firm tofu
- ΒΌ cup Green California Ripe olives, halved
- 2 lemons, sliced and segments
- Dash of onion powder
- Dash of black pepper
- Two dashes of smoked paprika
- 2 tsp olive oil
Directions
- Preheat oven to 400 degrees F.
- Cut tofu into 1 inch cubes into a medium bowl, add the olive oil, the spices, the lemons and the olives and mix so all the tofu is coated. Spread the mixture on half of a large rimmed sheet pan. Bake for 25-30 minutes.
