Tofu with Olives and Lemon

Ingredients

  • Ingredients

    • 1 block extra firm tofu
    • ΒΌ cup Green California Ripe olives, halved
    • 2 lemons, sliced and segments
    • Dash of onion powder
    • Dash of black pepper
    • Two dashes of smoked paprika
    • 2 tsp olive oil

Directions

  1. Preheat oven to 400 degrees F.
  2. Cut tofu into 1 inch cubes into a medium bowl, add the olive oil, the spices, the lemons and the olives and mix so all the tofu is coated. Spread the mixture on half of a large rimmed sheet pan. Bake for 25-30 minutes.
