Sweet Potato Thins topped with Olives

    • 2 sweet potatoes
    • ½ cup California Ripe Olives (green and/or black)
    • ⅛ cup finely chopped red onion
    • Microgreens to garnish
    • ¼ cup grated fresh Parmesan cheese
    • Black pepper, to taste


Directions

  1. Preheat oven to 400°F. Line baking sheet with parchment or silicone liner.
  2. Peel sweet potatoes and cut into even 1cm thick slices. Bake in oven until soft, about 35-45 minutes.
  3. When done, remove from oven and plate. Then, top evenly with remaining ingredients finishing with cheese and pepper.

This is equally tasty served warm or at room temperature.
