Sweet and Savory Lamb Bulgur

    • 1 teaspoon olive oil
    • 8 ounces lamb loin, coarsely chopped
    • 1/2 teaspoon Kosher salt
    • 1/3 cup dried currants
    • 1/4 cup green onions, chopped
    • 2 teaspoons minced garlic
    • 3 cups cooked bulgur
    • 1 cup California Black Ripe Olives, halved
    • 1 tablespoon sherry vinegar
    • 1/4 teaspoon ground cinnamon
    • Cayenne pepper to taste
    • 1/4 cup toasted slivered almonds

Directions

  1. Heat olive oil in a large high-sided sauté pan over medium-high heat.
  2. Add lamb, season with salt and cook for 3-4 minutes until browned, stirring occasionally.
  3. Add currants, green onions and garlic and continue to cook for 1 more minute.
  4. Stir in bulgur, California Ripe Olives, vinegar and cinnamon. Season to taste with a dash of cayenne pepper and top with almonds just before serving.
