Soba Noodle Salad with Ginger Miso Dressing

Dressing:
- 1/3 cup California ripe green olives
- 3 tablespoons seasoned rice vinegar
- 2 tablespoons white miso
- 2 tablespoons lime juice
- 2 tablespoons sesame oil
- 2 tablespoons lite soy sauce
- 1 tablespoon chopped ginger
- 1 green onion
Salad:
- 1 package soba noodles (3 bundles)
- 3/4 cup sliced California black ripe olives
- 2/3 cup small strips red bell pepper
- 2/3 cup matchstick strips carrot
- 1/3 cup shelled edamame
- 1/3 cup sliced cilantro leaves
- 2 green onions, sliced
- 1 rib celery, thinly sliced on the diagonal
- Toasted sesame seeds to taste
Directions
Puree all dressing ingredients in a blender until smooth. Cook noodles for 5 minutes and rinse under cold water; drain well. Transfer to a large bowl and toss with dressing. Add vegetables and toss again. Sprinkle with sesame seeds. Makes 6 servings.
Add a tablespoon or two of the olive brine to thin the dressing and add flavor if desired.
