Soba Noodle Salad with Ginger Miso Dressing

Ingredients

  • Dressing:

    • 1/3 cup California ripe green olives
    • 3 tablespoons seasoned rice vinegar
    • 2 tablespoons white miso
    • 2 tablespoons lime juice
    • 2 tablespoons sesame oil
    • 2 tablespoons lite soy sauce
    • 1 tablespoon chopped ginger
    • 1 green onion
  • Salad:

    • 1 package soba noodles (3 bundles)
    • 3/4 cup sliced California black ripe olives
    • 2/3 cup small strips red bell pepper
    • 2/3 cup matchstick strips carrot
    • 1/3 cup shelled edamame
    • 1/3 cup sliced cilantro leaves
    • 2 green onions, sliced
    • 1 rib celery, thinly sliced on the diagonal
    • Toasted sesame seeds to taste

Directions

Puree all dressing ingredients in a blender until smooth. Cook noodles for 5 minutes and rinse under cold water; drain well. Transfer to a large bowl and toss with dressing. Add vegetables and toss again. Sprinkle with sesame seeds. Makes 6 servings.

Add a tablespoon or two of the olive brine to thin the dressing and add flavor if desired.
