Smoky Beef Chili with Apple Cider and Black Olives

Ingredients
- 1 1/2 pounds lean ground beef
- 3 cloves garlic, chopped
- 1 onion, chopped
- 1 (6-oz.) can tomato paste
- 1 tablespoon ground cumin
- 1 tablespoon ground ancho chili
- 1 tablespoon chili powder
- 1 tablespoon Dijon mustard
- 2 teaspoons coarse salt
- 2 teaspoons dried basil
- 1 cup water
- 1 cup apple cider or juice
- 2 (14-oz.) cans fire-roasted tomatoes, diced
- 1 (28-oz.) can tomatoes, diced
- 1 (15-oz.) can cannellini beans
- 1 (6-oz.) can California Ripe Olives, drained
Directions
Brown beef with garlic and onion for 5 minutes. Stir in tomato paste and seasonings and cook 5 minutes more. Add water, apple cider and tomatoes; simmer, uncovered for 30 minutes. Add beans and olives and cook 10 minutes more. Serve with shredded cheese, if desired.
