Sausage Olive Orzo

Ingredients

  • 1 teaspoon olive oil
  • 8 ounces cooked Italian sausage, sliced into half moons
  • 1 small red onion, diced
  • 1 small fennel, diced
  • 1/2 cup white wine
  • 1/4 cup heavy cream
  • 1 tablespoon tomato paste
  • 4 cups cooked orzo pasta
  • 1 cup California Black Ripe Olives, whole, pitted

Directions

  1. Heat olive oil in a large high-sided sauté pan over medium-high heat.
  2. Add sausage and cook for 3-4 minutes until lightly browned.
  3. Stir in onion and fennel and continue cooking for 3-5 minutes until tender and golden.
  4. Whisk in white wine, cream and tomato paste.
  5. Stir in orzo and California Ripe Olives.
