Sausage Olive Orzo
Serves 4
Ingredients
- 1 teaspoon olive oil
- 8 ounces cooked Italian sausage, sliced into half moons
- 1 small red onion, diced
- 1 small fennel, diced
- 1/2 cup white wine
- 1/4 cup heavy cream
- 1 tablespoon tomato paste
- 4 cups cooked orzo pasta
- 1 cup California Black Ripe Olives, whole, pitted
Directions
- Heat olive oil in a large high-sided sauté pan over medium-high heat.
- Add sausage and cook for 3-4 minutes until lightly browned.
- Stir in onion and fennel and continue cooking for 3-5 minutes until tender and golden.
- Whisk in white wine, cream and tomato paste.
- Stir in orzo and California Ripe Olives.
