Peach “Nicoise” Chopped Salad
Ingredients
- 1 cup chopped fresh (or previously frozen) peaches
- 1 cup chopped fresh tomatoes
- 1 can albacore tuna filet, drained and chopped or flaked
- 1/4 cup sliced California Ripe Olives
- 3 Tbsp. sliced green onion
- 2-3 Tbsp. apple cider vinegar
- Salt and pepper
- Chopped Romaine lettuce, for serving (optional)
Directions
- Combine peaches, tomatoes, onion, and vinegar in a small mixing bowl.
- Season with salt and pepper, to taste.
- Allow peach and tomato ‘relish’ to macerate for about 30 minutes in the refrigerate.
- Combine olives and tuna with the peach and tomato ‘relish.’
- Serve with chopped Romaine, if desired. (Pita chips would also be a nice accompaniment.)
