Parmesan Chicken Pizza Roll

Ingredients

  • 3/4 pound chicken breast, cooked and shredded
  • 1 1/2 cans prepared marinara sauce
  • 8 ounces chopped frozen spinach, thawed and drained well
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 (4.25 ounce) can California Black Ripe Olives
  • 1 pound prepared pizza dough, or bread dough (room temperature)

Directions

Preheat oven to 375 degrees. In a large bowl combine chicken, marinara sauce, spinach, mozzarella, parmesan and California Ripe Olives. Set aside. Roll or pat out bread dough into a 10-inch by 12-inch rectangle on a lightly floured surface. Spread chicken mixture inside rectangle, leaving a 1 1/2-inch border around the edges. Roll up in a jelly roll form, pinching ends shut to fully enclose filling. Place on a lightly greased baking sheet for 15-20 minutes to rest and rise, then bake for 30 minutes or until golden brown. Allow to cool slightly before cutting into 6 pieces. Leftovers can be frozen in airtight plastic baggies. Serves 4-6 for dinner…Lots more if you cut them for snack time.
