Parmesan Baked Pasta


  • 1 tablespoon olive oil
  • 1 pound Italian-style poultry sausage, removed from casings
  • 3 cups prepared marinara sauce
  • 1/2 cup red wine
  • 1 (6 oz.) can California Black Ripe Olives, halved
  • 3/4 cup low fat ricotta cheese
  • 1 (1 lb.) package whole grain penne pasta, cooked
  • 1 cup shredded Italian cheese blend
  • 1 teaspoon chopped oregano


  1. Heat olive oil in a large sauté pan over medium high heat.
  2. Stir in sausage and cook for 5-6 minutes until browned and cooked through.
  3. Pour in marinara sauce and red wine and bring to a boil.
  4. Turn heat down to simmer and cook for 4-5 minutes.
  5. Remove from heat and stir in 1 cup of California Ripe Olives and ricotta cheese.
  6. Toss with pasta and pour into a 3 quart casserole dish.
  7. Top with cheese and sprinkle with oregano and remaining California Ripe Olives.
  8. Bake in a 400°F oven for 20 minutes until golden brown and heated through.
