Parmesan Baked Pasta

Serves 8
Ingredients
- 1 tablespoon olive oil
- 1 pound Italian-style poultry sausage, removed from casings
- 3 cups prepared marinara sauce
- 1/2 cup red wine
- 1 (6 oz.) can California Black Ripe Olives, halved
- 3/4 cup low fat ricotta cheese
- 1 (1 lb.) package whole grain penne pasta, cooked
- 1 cup shredded Italian cheese blend
- 1 teaspoon chopped oregano
Directions
- Heat olive oil in a large sauté pan over medium high heat.
- Stir in sausage and cook for 5-6 minutes until browned and cooked through.
- Pour in marinara sauce and red wine and bring to a boil.
- Turn heat down to simmer and cook for 4-5 minutes.
- Remove from heat and stir in 1 cup of California Ripe Olives and ricotta cheese.
- Toss with pasta and pour into a 3 quart casserole dish.
- Top with cheese and sprinkle with oregano and remaining California Ripe Olives.
- Bake in a 400°F oven for 20 minutes until golden brown and heated through.
