Olive Lemon Ice Cream

- 200g ricotta cheese
- 100g feta cheese, crumbled
- 100ml heavy cream (35%)
- 2 tbsp olive oil
- Black pepper, to taste
- 50g pitted black California Ripe olives, chopped
- Lemon zest (optional)
Directions
- In a medium bowl, combine the ricotta, crumbled feta, heavy cream, and olive oil. Mix well until smooth. Add a pinch of pepper and lemon zest if using. Stir to combine.
- Fold in the chopped black olives until they are evenly spread throughout the mixture.
- Pour the mixture into your ice cream container (I have a Ninja Creami). Follow the manufacturers directions to make ice cream.
- Serve immediately as a unique appetizer or with a fresh salad!
Tip for the Ninja: If the ice cream is too hard after spinning, use the “Respin” function. For an even creamier texture, you can add a small spoonful of cream or olive oil before respinning.
