Nutty Wild Rice


  • 2 tablespoons olive oil
  • 1 cup yellow onion, chopped
  • 1 tablespoon sherry vinegar
  • 1 1/2 cups cooked wild rice
  • 1 1/2 cups cooked brown rice
  • 1 cup California Black Ripe Olives, halved
  • 1/2 cup almonds, toasted slivered
  • Salt and pepper to taste


  1. Heat oil in a medium sauté pan over medium heat.
  2. Add onion and cook for 3-5 minutes, stirring occasionally until lightly browned.
  3. Remove from heat and stir in sherry vinegar.
  4. Combine with wild rice, white rice, California Ripe Olives and almonds in a large mixing bowl. Season to taste with salt and pepper.
