Nutty Wild Rice
Serves 4-6
Ingredients
- 2 tablespoons olive oil
- 1 cup yellow onion, chopped
- 1 tablespoon sherry vinegar
- 1 1/2 cups cooked wild rice
- 1 1/2 cups cooked brown rice
- 1 cup California Black Ripe Olives, halved
- 1/2 cup almonds, toasted slivered
- Salt and pepper to taste
Directions
- Heat oil in a medium sauté pan over medium heat.
- Add onion and cook for 3-5 minutes, stirring occasionally until lightly browned.
- Remove from heat and stir in sherry vinegar.
- Combine with wild rice, white rice, California Ripe Olives and almonds in a large mixing bowl. Season to taste with salt and pepper.
