Mushroom Olive Chicken Bowties


  • 2 tablespoons unsalted butter
  • 1 (8 oz.) package Cremini mushrooms, sliced
  • 3 cloves garlic, peeled and thinly sliced
  • 8 ounces roasted chicken thigh meat, coarsely chopped
  • 1 (6 oz.) can California Black Ripe Olives
  • 1 cup chicken broth
  • 1/3 cup dry sherry
  • 8 ounces bowtie pasta, cooked
  • 3 tablespoons chopped parsley
  • 1/4 teaspoon coarsely ground black pepper


Heat 1 tablespoon of butter over medium-high heat until melted and foamy. Add mushrooms and cook for 4-5 minutes, stirring occasionally until lightly browned. Add garlic and continue cooking for 2 more minutes. Stir in chicken and California Ripe Olives and remove from heat. Pour in chicken broth and sherry and bring to a boil. Remove from heat and toss in pasta, parsley, black pepper and remaining butter. Serve immediately.
