Mediterranean Veggie Wraps

Ingredients

  • 1 cup chopped California Black Ripe Olives
  • 1 cup, cooked Brown Rice
  • 1 cup Plain Greek Yogurt
  • 2-3 baby or 1 large Cucumbers
  • 1/2 chopped Red onion
  • 1 cup Lettuce
  • Feta cheese
  • 1 cup chopped Cherry tomatoes
  • Flatbread
  • 1/2 Lemon (for lemon juice)
  • 1 teaspoon Oregano
  • 1 clove Garlic
  • Salt and pepper

Directions

  1. Mix the Greek yogurt with juice of 1/2 of a lemon, 1/4 cup finely chopped cucumber, salt, pepper, oregano, and garlic. Set aside.
  2. Prepare the rest of the veggies
  3. Cook brown rice
  4. Add salt and a dash of oregano if desired
  5. Set out all the ingredients and build your wraps!

 

Notes
A tortilla or pita pocket would also work
