Mediterranean Olive Salad

Ingredients

  • 1 (14.5 Oz.) can Pitted California Black Ripe Olives, Drained & Chopped
  • 1/2 cup Chickpeas/Garbanzo Beans
  • 1/2 cup Cherry Tomatoes, Halved
  • 1/2 cup Fresh Basil Leaves, Chopped or Torn
  • 1/2 Red Bell Pepper, Chopped
  • 1/2 Yellow Bell Pepper, Chopped
  • 1/4 cup Red Onion, Minced
  • 1/4 cup Crumbled Reduced Fat Feta
  • 1 Lemon, Juiced (about 1/4 cup)
  • 2 Tbsp. Extra Virgin Olive Oil
  • Seasonings to Taste

Directions

  1. Combine all the ingredients together in a medium to large sealable serving bowl
  2. Cover and set in the fridge to chill and let the flavors marry.
  3. Enjoy!
