Mediterranean Flatbread

Ingredients

  • 2 - 9 inch Naan or your favorite prepared pizza dough
  • 1 cup chopped fresh tomatoes
  • 3/4 cup chopped California Black Ripe Olives
  • 1/2 cup frozen artichoke heart quarters that have been thawed
  • 2 cloves chopped garlic
  • 1/3 cup chopped packed fresh basil
  • 1/4 cup chopped oregano leaves
  • 1 1/2 tablespoons olive oil
  • 1/2 cup feta cheese
  • 4 ounces of baby arugula
  • 1/4 cup red onion

Directions

  1. Preheat oven to 425
  2. Mix the tomatoes through olive oil together in a bowl
  3. Spread the mixture onto the bread
  4. Top each bread with feta cheese
  5. Place directly on grill or oven rack and bake for 10 to 15 minutes until crust becomes crispy and cheese has melted
  6. When cool enough; slice each bread in half and top with arugula and onion
