Mediterranean Flatbread
Ingredients
- 2 - 9 inch Naan or your favorite prepared pizza dough
- 1 cup chopped fresh tomatoes
- 3/4 cup chopped California Black Ripe Olives
- 1/2 cup frozen artichoke heart quarters that have been thawed
- 2 cloves chopped garlic
- 1/3 cup chopped packed fresh basil
- 1/4 cup chopped oregano leaves
- 1 1/2 tablespoons olive oil
- 1/2 cup feta cheese
- 4 ounces of baby arugula
- 1/4 cup red onion
Directions
- Preheat oven to 425
- Mix the tomatoes through olive oil together in a bowl
- Spread the mixture onto the bread
- Top each bread with feta cheese
- Place directly on grill or oven rack and bake for 10 to 15 minutes until crust becomes crispy and cheese has melted
- When cool enough; slice each bread in half and top with arugula and onion
