Meatloaf Minis

Ingredients
- 1 pound ground turkey
- 2/3 cup ketchup
- 1/2 cup California Black Ripe Olives, sliced
- 1/2 cup rolled oats
- 1 egg, beaten
- Salt and pepper, to taste
Directions
- In a large mixing bowl, combine ground turkey with ketchup, California Black Ripe Olives, oats and eggs. Season with salt and pepper to taste.
- For each meatloaf mini, scoop approximately 1 heaping tablespoon of meatloaf mix onto a lightly greased baking sheet. Repeat until all of the mixture is used up.
- Brush tops and sides with remaining ketchup and bake in a 400 degree oven for 15 minutes, and then broil under high heat for 1-3 minutes until browned.
- Eat immediately or cool thoroughly, then pack in lunchbox with whole wheat rolls on the side.
