Mac ‘n Cheese with Olives, Peas & Broccoli


  • 8 ounces whole grain pasta, cooked
  • 2 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 1 cup low fat milk
  • 1 cup low sodium chicken broth
  • 1 ½ cups grated sharp cheddar cheese
  • 1 cup frozen peas
  • 2 cups cooked broccoli florets
  • 3/4 cup California Black Ripe Olives, sliced
  • Salt and pepper, to taste


  1. Cook pasta according to package and set aside.
  2. Meanwhile, in a medium-sized saucepan over medium heat, melt butter and whisk in flour, stirring constantly until mixture becomes a thick paste.
  3. Whisking constantly, add milk and broth and cook until thick, about 5 minutes.
  4. When mixture is thickened, mix in cheese and stir until well-combined.
  5. Stir in peas, broccoli florets and sliced California Black Ripe Olives, heating until vegetables are warmed-through.
  6. Add cooked pasta and mix well until well coated in sauce.
  7. Season to taste and serve.
