Jacket Sweet Potatoes

If you’ve ever spent time in England, you’ll be familiar with the ever popular Jacket Potato – a meal made from a baked potato, filled with a variety of toppings. We’ve taken this classic meal idea and given it a little U.S. twist by baking sweet potatoes and topping them with chopped California Ripe Olives and other tasty garnishes. Enjoy as a tasty lunch or pair with a protein of your choice to make it a filling dinner.

    • 2 sweet potatoes
    • ½ cup California Ripe Olives (green and/or black)
    • 4 strips bacon, cooked and crumbled
    • 3 tbsp crumbled or grated cheese of your choice
    • 1 jalapeno pepper, thinly sliced
    • Handful of chopped cilantro, roughly chopped

Directions

  1. Scrub sweet potatoes clean and dry with tea towel. Wrap in foil and bake in the middle of a preheated oven at 400°F for 45-60 minutes, until soft. On lower rack, place baking sheet to catch any drips from the sweet potatoes.
  2. Just before they are done, prepare your toppings. Drain and roughly chop olives, bacon, cilantro, grate, or crumble cheese and finely slice your pepper.
  3. Remove cooked sweet potatoes from the oven. Remove foil and cut sweet potatoes in half. Garnish evenly and enjoy!
