Grilled Guac-O-Mole Chicken
Serves 4
Ingredients
- 1/2 cup lime juice
- 1/2 cup chopped cilantro
- 1 tablespoon minced garlic
- 4 (6 oz.) boneless chicken breasts
- 2 teaspoons chipotle chili powder
- Salt to taste
- 1 large avocado
- 1/2 cup California Black Ripe Olives
Directions
- Combine lime juice, cilantro and garlic in a small mixing bowl.
- Pour half into a shallow baking dish. Cover remaining half of mixture and set aside.
- Place chicken breasts in baking dish and sprinkle with chili powder and season with salt.
- Cover and marinate in the refrigerator for 30-60 minutes.
- After chicken has marinated, grill over medium-high heat for 4-5 minutes on each side until cooked through.
- While chicken is cooking, combine avocado, California Ripe Olives and reserved lime cilantro mixture. Season with salt and serve with chicken.
