Greek Potato Salad with Olives

Ingredients

  • Ingredients

    • 4 cups quartered Yukon potatoes
    • ½ cup plain Greek yogurt
    • 1 garlic clove grated
    • ¼ cup minced dill, parsley, or cilantro
    • ¾ cup California Ripe Olives (I used black)
    • Salt and pepper to taste

Directions

  1. Add potatoes to a saucepot with enough water to cover. Bring to a boil on high heat and then reduce heat to medium. Strain and add to a medium bowl.
  2. Add in the rest of the ingredients to the bowl with potatoes. Mix until combined.
  3. Serve and enjoy!
