Golden Breaded Cod


  • 4 (5 oz.) fillets boneless, skinless cod
  • 1/2 cup plain bread crumbs
  • 1 tablespoon olive oil
  • 1/2 cup white wine
  • 1 teaspoon chopped lemon zest
  • 2 tablespoons salted butter
  • 1 pound asparagus, cut into 2-inch pieces and blanched
  • 3/4 cup California Black Ripe Olives, halved


  1. Coat fish in bread crumbs and set aside.
  2. Heat oil in a large high-sided sauté pan over medium-high heat.
  3. Place fish in pan and cook for 3-4 minutes until lightly browned.
  4. Flip to other side, add white wine and lemon zest and bring to a boil.
  5. Turn heat down to simmer, cover and cook for 4-6 more minutes until fish is cooked through.
  6. Transfer fish to serving plates. Whisk butter into pan and toss in asparagus and California Ripe Olives. Plate with fish and serve hot.
