Golden Breaded Cod

Serves 4
Ingredients
- 4 (5 oz.) fillets boneless, skinless cod
- 1/2 cup plain bread crumbs
- 1 tablespoon olive oil
- 1/2 cup white wine
- 1 teaspoon chopped lemon zest
- 2 tablespoons salted butter
- 1 pound asparagus, cut into 2-inch pieces and blanched
- 3/4 cup California Black Ripe Olives, halved
Directions
- Coat fish in bread crumbs and set aside.
- Heat oil in a large high-sided sauté pan over medium-high heat.
- Place fish in pan and cook for 3-4 minutes until lightly browned.
- Flip to other side, add white wine and lemon zest and bring to a boil.
- Turn heat down to simmer, cover and cook for 4-6 more minutes until fish is cooked through.
- Transfer fish to serving plates. Whisk butter into pan and toss in asparagus and California Ripe Olives. Plate with fish and serve hot.
