
Gin & Cucumber Juice Cocktail

Ingredients
- 2 Grated Persian Cucumbers with Skin on
- 1 pinch Salt
- 5 ounces, good quality Gin
- 1 ounce dry Vermouth
- 1/2 ounce California Green Olive Juice
- Optional garnishes: Lemon cheeks, Cucumber ribbons, olive and rosemary skewers
Directions
- Add the grated cucumber and salt to a sieve over a cup or bowl. Let sit for 5 minutes.
- Once the cucumbers have started to release their juices, muddle or squeeze the cucumber shreds to extract any remaining juice and set aside.
- To a mixing glass filled with ice, add the gin, dry vermouth and olive juice. Stir for 30 seconds.
- Add all of the cucumber juice and stir to combine. Finally, strain into two cocktail glasses over ice and garnish to your liking.
