Gin & Cucumber Juice Cocktail


  • 2 Grated Persian Cucumbers with Skin on
  • 1 pinch Salt
  • 5 ounces, good quality Gin
  • 1 ounce dry Vermouth
  • 1/2 ounce California Green Olive Juice
  • Optional garnishes: Lemon cheeks, Cucumber ribbons, olive and rosemary skewers


  1. Add the grated cucumber and salt to a sieve over a cup or bowl. Let sit for 5 minutes.
  2. Once the cucumbers have started to release their juices, muddle or squeeze the cucumber shreds to extract any remaining juice and set aside.
  3. To a mixing glass filled with ice, add the gin, dry vermouth and olive juice. Stir for 30 seconds.
  4. Add all of the cucumber juice and stir to combine. Finally, strain into two cocktail glasses over ice and garnish to your liking.
