Garlic Mushroom Simmered Chicken


  • 1 tablespoon olive oil
  • 4 chicken legs, thighs attached
  • 2 cups sliced crimini mushrooms
  • 4 cloves garlic, thinly sliced
  • 1/2 cup white wine
  • 1/2 cup water
  • 3/4 cup California Black Ripe Olives
  • 1 teaspoon anise seed
  • Salt and pepper to taste


  1. Heat oil in a large sauté pan over medium-high heat.
  2. Add chicken and brown on all sides for 4-5 minutes.
  3. Stir in mushrooms and garlic and cook until golden.
  4. Pour in wine, water, California Ripe Olives and anise.
  5. Season with salt and pepper to taste and bring to a boil. Turn down to simmer and place in a 375°F oven for 45 minutes-1 hour until cooked through.
