Fig & Olive Tapenade + Goat Cheese Crostini
Ingredients for the Tapenade
- 1 cup California Ripe Olives
- 2 garlic cloves
- Juice from 1 lemon
- 10 figs, roasted*
- 2 Tbsp extra virgin olive oil
- 1 tsp capers
Ingredients for the Crostini
- 1 loaf of your favorite whole grain baguette/bread
- 1/2 cup goat cheese
Directions
- To make the tapenade blend all the ingredients in a high powered blender or food processor until smooth, but still a little chunky. Set tapenade aside.
- Preheat oven to broil and slice your loaf of bread into small slices. Drizzle with a little olive oil then toast in the oven on a baking sheet for 5 minutes each side, or until bread is crispy. Allow bread to cool for a few minutes then spread with goat cheese. Top each with some tapenade and sprinkle with chives.
Notes
*To make roasted figs, set oven to 400 degrees Fahrenheit. Slice figs in half and toss with good quality balsamic and a little sea salt. Roast in the oven for about 15 minutes then allow them to cool before blending. You can do this step ahead of time.
