Crunchy Salad with Oranges and Black Olives


Ingredients for dressing

  • 4 ounces cream cheese, room temperature
  • 1 teaspoon finely grated orange rind
  • 1/2 cup orange juice, freshly squeezed
  • 1/2 tablespoon honey
  • 1/2 tablespoon Dijon mustard
  • 1/2 teaspoon salt

Ingredients for salad

  • 8 heads romaine lettuce
  • 1 (4-oz.) package bean sprouts
  • 2 navel oranges, peeled and segmented
  • 1/3 cup jicama, peeled and chopped
  • 1 (2.2-oz.) can sliced California Ripe Olives, drained


  1. Puree all dressing ingredients in a blender until smooth and creamy. Chill until ready to serve.
  2. Place all salad ingredients in a large bowl and toss lightly. Drizzle with chilled dressing and toss well to coat.
