Crunchy Salad with Oranges and Black Olives

Ingredients
Ingredients for dressing
- 4 ounces cream cheese, room temperature
- 1 teaspoon finely grated orange rind
- 1/2 cup orange juice, freshly squeezed
- 1/2 tablespoon honey
- 1/2 tablespoon Dijon mustard
- 1/2 teaspoon salt
Ingredients for salad
- 8 heads romaine lettuce
- 1 (4-oz.) package bean sprouts
- 2 navel oranges, peeled and segmented
- 1/3 cup jicama, peeled and chopped
- 1 (2.2-oz.) can sliced California Ripe Olives, drained
Directions
- Puree all dressing ingredients in a blender until smooth and creamy. Chill until ready to serve.
- Place all salad ingredients in a large bowl and toss lightly. Drizzle with chilled dressing and toss well to coat.
