Chicken Supreme with Black Olives

Ingredients
- 3 tablespoons butter
- 4 (4-6 oz.) boneless, skinless chicken breasts
- 1/2 pound sliced mushrooms
- 6 green onions, sliced
- 3 cloves garlic, minced
- 1 teaspoon fresh rosemary, chopped
- 1 (2.25-oz.) can sliced California Ripe Olives, drained
- 1/2 teaspoon salt
- Freshly ground black pepper
- 4 (1-oz.) slices mozzarella cheese
Directions
Preheat oven to 350°F and coat a 13 x 9-inch baking dish with cooking spray.
Melt butter in a large skillet over medium heat. Add chicken and cook for 5 minutes on each side or until golden brown; remove from skillet. Add mushrooms, green onions, garlic, rosemary and olives to skillet and cook for 5 minutes or until mushrooms are softened.
Place chicken in prepared baking dish and season with salt and pepper; top with olive mixture and cheese. Cover with foil and bake for 20 minutes.
