California Ripe Olives Fusion Pasta

- 150g Pasta of Choice
- 1½ tbsp olive oil
- 3 garlic cloves minced
- ½ big onion diced
- 10 green and 10 black, California Ripe Olives
- ½ cup grated Parmesan cheese
- 3–4 perilla leaves, finely julienned
- 1 tbsp lemon juice
- 1 tbsp soy sauce
- 1 tbsp Cooking Wine
- Salt & black pepper to taste
Directions
- Boil pasta in salted water until al dente. Save a few tablespoons of pasta water.
- In a pan, warm olive oil on low heat and sauté garlic & onions until lightly golden.
- Add sliced olives and cooking wine —cook off the alcohol
- Toss in pasta, then season with soy sauce and lemon juice.
- Turn off the heat and fold in cheese & shredded perilla (so it stays aromatic, not wilted).
- Plate & enjoy.
