Brussel Sprout Bowties


  • 2 tablespoons unsalted butter
  • 1 pound brussel sprouts, quartered
  • 2 ounces Prosciutto, sliced and coarsely chopped*
  • 1 tablespoon minced garlic
  • 2 teaspoons chopped sage
  • 1 cup California Black Ripe Olives, halved
  • 1 1/2 tablespoons lemon juice
  • 1/2 pound farfalle pasta, cooked
  • Kosher salt and black pepper to taste


  1. Heat butter in a large sauté pan over medium heat.
  2. Add brussel sprouts and proscuitto and cook for 4-6 minutes until golden, stirring occasionally to prevent sticking.
  3. Stir in garlic and sage and continue cooking for 1 more minute until browned.
  4. Pour in California Ripe Olives and lemon juice and toss with pasta. Season to taste with salt and pepper.

    * substitute ham if desired

    Serving suggestion: Garnish with parmesan cheese on top.
