Beet, Lentil and Cracked Wheat Pilaf
Serves 4
Ingredients
- 2 ounces bacon, chopped peppered
- 3/4 cup shallots, minced
- 1 3/4 cups cooked lentils
- 1 3/4 cups cracked wheat
- 1 cup California Black Ripe Olives, halved
- 1 1/2 tablespoons red wine vinegar
- 1/2 teaspoon Kosher salt
- 6 ounces beets, Peeled, diced roasted (1/2-inch)
- 1/2 cup goat cheese, crumbled
- 1/3 cup chives, snipped (1/4-inch)
Directions
- Cook bacon in a medium sized sauté pan over medium heat for 3-4 minutes, stirring occasionally until crisp.
- Add shallots and continue cooking for 3-4 minutes until tender.
- Transfer to a large mixing bowl and stir in lentils, cracked wheat, California Ripe Olives, vinegar and salt.
- Gently toss in beets, goat cheese and chives. Serve warm or room temperature.
*Serving suggestion: Top with toasted walnuts before serving.
