Beet, Lentil and Cracked Wheat Pilaf

Ingredients

  • 2 ounces bacon, chopped peppered
  • 3/4 cup shallots, minced
  • 1 3/4 cups cooked lentils
  • 1 3/4 cups cracked wheat
  • 1 cup California Black Ripe Olives, halved
  • 1 1/2 tablespoons red wine vinegar
  • 1/2 teaspoon Kosher salt
  • 6 ounces beets, Peeled, diced roasted (1/2-inch)
  • 1/2 cup goat cheese, crumbled
  • 1/3 cup chives, snipped (1/4-inch)

Directions

  1. Cook bacon in a medium sized sauté pan over medium heat for 3-4 minutes, stirring occasionally until crisp.
  2. Add shallots and continue cooking for 3-4 minutes until tender.
  3. Transfer to a large mixing bowl and stir in lentils, cracked wheat, California Ripe Olives, vinegar and salt.
  4. Gently toss in beets, goat cheese and chives. Serve warm or room temperature.

    *Serving suggestion: Top with toasted walnuts before serving.
