Air Fryer Stuffed Olives

    • ½ can California Ripe Olives (green and/or black)
    • 3 tbsp cheese of your choice (We used a fig goat cheese. Other options that would be delicious would be brie, blue cheese, or a peppered or smoky cheese.)
    • ½ cup all purpose flour
    • 1 egg, beaten
    • ½ cup breadcrumbs
    • Olive oil spray

Directions

  1. Drain olives. With a small, sharp knife, carefully cut one slice to open each one up and fill with cheese, then push each to close.
  2. Prepare 3 small bowls, with flour, egg and breadcrumbs in each. Then roll each olive first in flour, then in egg, then in the breadcrumbs.
  3. Preheat air fryer to 400°. When ready, lay prepared olives in one layer inside cooking tray. Alternatively place in a foil plate and place in air fryer. Spray with olive oil.
  4. Cook for 5 minutes. Using tongs, turn olives to cook evenly. Return to air fryer and cook for another 3 minutes (or until lightly brown). Enjoy!
