Garlic and Olive Focaccini


  • 1 pound prepared pizza dough, divided into 4 (4 oz.) balls
  • 2 tablespoons pureed roasted garlic
  • 1 cup California Black Ripe Olives, halved
  • 1/2 cup Asiago cheese, shredded
  • 2 teaspoons rosemary, chopped
  • 2 teaspoons thyme, chopped


Shape each piece of pizza dough into a 5-6 inch disc. Place onto a well greased baking sheet. Spread 1/2 tablespoon of garlic puree on each, then dot with 1/4 cup of California Ripe Olives. Sprinkle with 2 tablespoons of asiago cheese and a 1/2 teaspoon of rosemary and thyme, then season with black pepper to taste. Allow to rest in a warm place for 30-60 minutes, then bake in a 400 degree oven for 15-20 minutes until lightly golden.

Serving Suggestion: Cut into 1-inch thick strips before plating.
