Brussel Sprout Bowties
Serves 4
Ingredients
- 2 tablespoons unsalted butter
- 1 pound brussel sprouts, quartered
- 2 ounces Prosciutto, sliced and coarsely chopped*
- 1 tablespoon minced garlic
- 2 teaspoons chopped sage
- 1 cup California Black Ripe Olives, halved
- 1 1/2 tablespoons lemon juice
- 1/2 pound farfalle pasta, cooked
- Kosher salt and black pepper to taste
Directions
- Heat butter in a large sauté pan over medium heat.
- Add brussel sprouts and proscuitto and cook for 4-6 minutes until golden, stirring occasionally to prevent sticking.
- Stir in garlic and sage and continue cooking for 1 more minute until browned.
- Pour in California Ripe Olives and lemon juice and toss with pasta. Season to taste with salt and pepper.
* substitute ham if desired
Serving suggestion: Garnish with parmesan cheese on top.
