Turkish Sea Bass
Serves 4
Ingredients
- 1 1/2 pounds oranges, peeled and sliced into 1/4-inch thick rounds
- 3/4 cup California Black Ripe Olives, wedged
- 1/2 cup red onions, sliced
- 1 tablespoon chopped parsley
- 1 tablespoon chopped mint
- 1/8 teaspoon ground coriander
- 1/8 teaspoon ground cinnamon
- 1 pinch Cayenne pepper
- 4 (6 ounce) boneless, skinless sea bass fillets
- 3/4 teaspoon Kosher salt
- 1/4 teaspoon paprika
- 1 tablespoon olive oil
Directions
- In a medium sized mixing bowl combine oranges, California Ripe Olives, onions, parsley and mint.
- Season with coriander, cinnamon and cayenne. Set aside.
- Season fish with salt and paprika.
- Heat oil in a large sauté and over medium high heat.
- Place bass in pan and cook on each side for 3-4 minutes. Serve sea bass on top of orange salad.
