Turkey, Avocado and Olive Salad

    • 1 avocado
    • 1 cup lemon juice, juiced
    • 3/4 cup buttermilk
    • salt and pepper to taste
    • 12 ounces mixed baby greens
    • 8 ounces smoked turkey, chopped
    • 1 whole red onion, sliced
    • 3 whole carrots, peeled and sliced
    • 4 ounces gouda cheese, chopped
    • 4 ounces toasted walnuts, crushed
    • 1/2 cup California Black Ripe Olives, sliced

Directions

  1. Combine avocado, lemon juice and buttermilk in a blender or food processor and puree until smooth.
  2. Season to taste with salt and pepper and set aside.
  3. In a large mixing bowl combine greens, turkey, red onion, carrots, cheese, walnuts and California Ripe Olives.
  4. Mix in dressing and toss until evenly combined.
