Sweet and Savory Lamb Bulgur
Serves 4
Ingredients
- 1 teaspoon olive oil
- 8 ounces lamb loin, coarsely chopped
- 1/2 teaspoon Kosher salt
- 1/3 cup dried currants
- 1/4 cup green onions, chopped
- 2 teaspoons minced garlic
- 3 cups cooked bulgur
- 1 cup California Black Ripe Olives, halved
- 1 tablespoon sherry vinegar
- 1/4 teaspoon ground cinnamon
- Cayenne pepper to taste
- 1/4 cup toasted slivered almonds
Directions
- Heat olive oil in a large high-sided sauté pan over medium-high heat.
- Add lamb, season with salt and cook for 3-4 minutes until browned, stirring occasionally.
- Add currants, green onions and garlic and continue to cook for 1 more minute.
- Stir in bulgur, California Ripe Olives, vinegar and cinnamon. Season to taste with a dash of cayenne pepper and top with almonds just before serving.
