Lime Marinated Salad

Ingredients

  • 1/2 pound snapper fillets, cut into 1-inch chunks and poached
  • 1/4 pound small bay scallops, poached
  • 1/4 pound medium shrimp, peeled, deveined and poached
  • 1 avocado
  • 3/4 cup California Black Ripe Olives, halved
  • 1/2 cup green onions
  • 1/4 cup olive oil
  • 1/4 cup lime juice
  • 3 tablespoons chopped cilantro
  • 3/4 teaspoon kosher salt
  • 1 pinch cayenne

Directions

In a large mixing bowl, combine snapper, scallops, shrimp, avocado, California Ripe Olives and green onions. Season with olive oil, lime juice, cilantro, salt and cayenne. Cover and refrigerate for at least 1 hour before serving.
