Lime Marinated Salad

Ingredients
- 1/2 pound snapper fillets, cut into 1-inch chunks and poached
- 1/4 pound small bay scallops, poached
- 1/4 pound medium shrimp, peeled, deveined and poached
- 1 avocado
- 3/4 cup California Black Ripe Olives, halved
- 1/2 cup green onions
- 1/4 cup olive oil
- 1/4 cup lime juice
- 3 tablespoons chopped cilantro
- 3/4 teaspoon kosher salt
- 1 pinch cayenne
Directions
In a large mixing bowl, combine snapper, scallops, shrimp, avocado, California Ripe Olives and green onions. Season with olive oil, lime juice, cilantro, salt and cayenne. Cover and refrigerate for at least 1 hour before serving.
