Mac ‘n Cheese with Olives, Peas & Broccoli
Serves 6
Ingredients
- 8 ounces whole grain pasta, cooked
- 2 tablespoons butter
- 4 tablespoons all-purpose flour
- 1 cup low fat milk
- 1 cup low sodium chicken broth
- 1 ½ cups grated sharp cheddar cheese
- 1 cup frozen peas
- 2 cups cooked broccoli florets
- 3/4 cup California Black Ripe Olives, sliced
- Salt and pepper, to taste
Directions
- Cook pasta according to package and set aside.
- Meanwhile, in a medium-sized saucepan over medium heat, melt butter and whisk in flour, stirring constantly until mixture becomes a thick paste.
- Whisking constantly, add milk and broth and cook until thick, about 5 minutes.
- When mixture is thickened, mix in cheese and stir until well-combined.
- Stir in peas, broccoli florets and sliced California Black Ripe Olives, heating until vegetables are warmed-through.
- Add cooked pasta and mix well until well coated in sauce.
- Season to taste and serve.
