Mediterranean Veggie Wraps
Ingredients
- 1 cup chopped California Black Ripe Olives
- 1 cup, cooked Brown Rice
- 1 cup Plain Greek Yogurt
- 2-3 baby or 1 large Cucumbers
- 1/2 chopped Red onion
- 1 cup Lettuce
- Feta cheese
- 1 cup chopped Cherry tomatoes
- Flatbread
- 1/2 Lemon (for lemon juice)
- 1 teaspoon Oregano
- 1 clove Garlic
- Salt and pepper
Directions
- Mix the Greek yogurt with juice of 1/2 of a lemon, 1/4 cup finely chopped cucumber, salt, pepper, oregano, and garlic. Set aside.
- Prepare the rest of the veggies
- Cook brown rice
- Add salt and a dash of oregano if desired
- Set out all the ingredients and build your wraps!
Notes
A tortilla or pita pocket would also work
