Sweet Potato Thins topped with Olives

- 2 sweet potatoes
- ½ cup California Ripe Olives (green and/or black)
- ⅛ cup finely chopped red onion
- Microgreens to garnish
- ¼ cup grated fresh Parmesan cheese
- Black pepper, to taste
Directions
- Preheat oven to 400°F. Line baking sheet with parchment or silicone liner.
- Peel sweet potatoes and cut into even 1cm thick slices. Bake in oven until soft, about 35-45 minutes.
- When done, remove from oven and plate. Then, top evenly with remaining ingredients finishing with cheese and pepper.
This is equally tasty served warm or at room temperature.
