Greek Potato Salad with Olives

- 4 cups quartered Yukon potatoes
- ½ cup plain Greek yogurt
- 1 garlic clove grated
- ¼ cup minced dill, parsley, or cilantro
- ¾ cup California Ripe Olives (I used black)
- Salt and pepper to taste
Directions
- Add potatoes to a saucepot with enough water to cover. Bring to a boil on high heat and then reduce heat to medium. Strain and add to a medium bowl.
- Add in the rest of the ingredients to the bowl with potatoes. Mix until combined.
- Serve and enjoy!
