Olive Lemon Ice Cream

Ingredients

    • 200g ricotta cheese
    • 100g feta cheese, crumbled
    • 100ml heavy cream (35%)
    • 2 tbsp olive oil
    • Black pepper, to taste
    • 50g pitted black California Ripe olives, chopped
    • Lemon zest (optional)

Directions

  1. In a medium bowl, combine the ricotta, crumbled feta, heavy cream, and olive oil. Mix well until smooth. Add a pinch of pepper and lemon zest if using. Stir to combine.
  2. Fold in the chopped black olives until they are evenly spread throughout the mixture.
  3. Pour the mixture into your ice cream container (I have a Ninja Creami). Follow the manufacturers directions to make ice cream.
  4. Serve immediately as a unique appetizer or with a fresh salad!

Tip for the Ninja: If the ice cream is too hard after spinning, use the “Respin” function. For an even creamier texture, you can add a small spoonful of cream or olive oil before respinning.
